Description
This Christmas Pavlova is a festive dessert that brings the wow-factor with minimal effort. A crisp meringue shell with a soft marshmallow center, topped with whipped cream and a vibrant medley of red and green fruits. Perfect for the holidays!
Ingredients
4 large egg whites (room temperature)
1 cup granulated sugar
2 teaspoons cornstarch
1 teaspoon white vinegar
0.5 teaspoon vanilla extract
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract (for whipped cream)
0.5 cup fresh strawberries, halved
0.5 cup fresh raspberries
0.25 cup pomegranate arils
1 kiwi, peeled and sliced
Optional: mint leaves for garnish
Optional: raspberry sauce or passionfruit pulp
Instructions
1. Preheat oven to 250°F (120°C) and line a baking sheet with parchment paper. Trace a circle as a guide if desired.
2. Beat egg whites in a clean bowl until soft peaks form. Gradually add sugar, one tablespoon at a time, until stiff, glossy peaks form and sugar is dissolved (8–10 minutes).
3. Sift in cornstarch, add vinegar and vanilla. Gently fold to combine without deflating the meringue.
4. Spoon the meringue onto parchment, shaping it into a round disk with a slight center indentation.
5. Bake for 90 minutes. Turn off oven and let it cool completely inside with the door slightly ajar.
6. Beat heavy cream with powdered sugar and vanilla until soft peaks form.
7. Once pavlova is cool, top with whipped cream, fresh fruit, mint, and drizzle with optional sauce.
Notes
Always use a clean, dry bowl for whipping egg whites.
Cool the pavlova fully in the oven to avoid collapsing.
Add fruit just before serving to keep the meringue crisp.
