Ingredients
1 lb ground beef
4 cups diced potatoes
1 cup chopped carrots
0.5 cup diced celery
0.5 cup chopped onion
3 cloves garlic, minced
6 cups beef broth
1 tbsp tomato paste
1 tsp dried thyme
1 tsp paprika
Salt and black pepper to taste
1 tbsp olive oil
Optional: chopped parsley for garnish
Instructions
1. Heat a large soup pot over medium-high heat. Add the ground beef and cook until browned. Drain excess fat if needed.
2. Add olive oil to the pot. Stir in onions, celery, and carrots. Cook for 5-7 minutes until softened. Add garlic and cook 1 minute more.
3. Stir in tomato paste, paprika, thyme, salt, and pepper. Cook 1-2 minutes to build flavor.
4. Pour in beef broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until vegetables are tender.
5. Taste and adjust seasoning as needed. Serve hot, topped with parsley if desired.
Notes
For a creamier texture, add a splash of heavy cream at the end.
Yukon Gold potatoes work well unpeeled for extra texture.
