Description
This Churro Chex Mix blends crispy rice cereal with a buttery brown sugar glaze, baked until golden and finished with a shower of cinnamon sugar. It’s the perfect snack mix for parties, holidays, or whenever you’re craving something sweet and crunchy.
Ingredients
6 cups Rice Chex cereal
1/2 cup unsalted butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup granulated sugar (for coating)
1 tablespoon cinnamon (for coating)
Instructions
1. Preheat oven to 300°F and line a baking sheet with parchment paper.
2. In a large bowl, measure out the Rice Chex cereal and set aside.
3. In a saucepan, melt butter over medium heat. Stir in brown sugar, granulated sugar, cinnamon, salt, and vanilla. Simmer for 1–2 minutes until smooth.
4. Pour glaze over the cereal and gently stir to coat evenly.
5. Spread the mixture on the prepared baking sheet. Bake for 30 minutes, stirring once halfway through.
6. In a separate bowl, mix 1/2 cup granulated sugar and 1 tablespoon cinnamon.
7. After baking, while the mix is still warm, sprinkle cinnamon sugar over the top and toss gently.
8. Let cool completely before serving or storing.
Notes
For extra crunch, let the mix cool on a wire rack in a single layer.
Want a flavor twist? Try adding a pinch of nutmeg to the glaze.
Double the batch easily—just use two trays and rotate them halfway.
