Ingredients
1 sheet puff pastry, thawed but chilled
1 medium apple, peeled and finely chopped
0.5 teaspoon cinnamon
1 tablespoon brown sugar
0.5 cup cottage cheese
0.25 teaspoon vanilla extract
1 egg
Powdered sugar, optional for dusting
Instructions
1. In a small bowl, mix the chopped apple, cinnamon, and brown sugar. Let sit for 5 minutes. Fold in cottage cheese and vanilla.
2. Roll out puff pastry on a lightly floured surface. Cut into 12 squares.
3. Place a spoonful of filling in the center of each square.
4. Fold each square diagonally and press edges with a fork to seal.
5. Place on parchment-lined baking sheet and brush with beaten egg.
6. Bake at 375°F (190°C) for 18–20 minutes, or until golden and puffed.
7. Cool slightly and dust with powdered sugar if using. Serve warm or cold.
Notes
Use small curd cottage cheese for best texture.
Seal the edges well to prevent leaks.
For extra flavor, add a pinch of nutmeg to the filling.
