Description

Chewy, buttery, and filled with tropical flavor, these Coconut Butter Bars are the perfect dessert for coconut lovers. They’re easy to make, travel well, and taste amazing whether served warm or chilled.


Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 cup light brown sugar, packed

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

2 cups shredded sweetened coconut

1/2 cup unsweetened shredded coconut (for topping)

1/2 cup white or dark chocolate chips (optional)


Instructions

1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper.

2. Beat butter, granulated sugar, and brown sugar until light and fluffy.

3. Add eggs one at a time, then mix in vanilla extract.

4. In a separate bowl, whisk flour, baking powder, and salt. Add to wet mixture until combined.

5. Fold in shredded sweetened coconut (and chocolate chips, if using).

6. Spread batter into prepared dish. Sprinkle with unsweetened shredded coconut.

7. Bake 25–30 minutes or until golden brown and a toothpick comes out clean.

8. Cool completely before slicing and serving.

Notes

Use parchment with overhang to easily lift the bars out for clean cuts.

For extra flavor, lightly toast the shredded coconut before folding it into the batter.

These bars freeze beautifully; just wrap tightly and thaw before serving.
