Ingredients
1 cup unsalted butter, melted
2 cups all-purpose flour
1/2 cup powdered sugar
1/2 teaspoon salt
3 large eggs
1 1/2 cups brown sugar, packed
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 1/2 cups sweetened shredded coconut
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
2. In a bowl, combine melted butter, 2 cups flour, powdered sugar, and 1/2 teaspoon salt. Press into the pan to form the crust.
3. Bake crust for 15–18 minutes until edges are golden.
4. While crust bakes, whisk eggs, brown sugar, and vanilla in a large bowl.
5. Stir in 2 tablespoons flour, baking powder, and 1/4 teaspoon salt until smooth.
6. Fold in shredded coconut until well combined.
7. Pour topping over the warm crust and spread evenly.
8. Bake for 22–25 minutes until the top is golden and set.
9. Cool completely in the pan before slicing.
Notes
Let the bars cool fully before cutting for clean slices.
You can add mini chocolate chips or chopped pecans for extra texture.
