Description

Coffee Sugar Cookies are buttery, crisp-edged delights infused with instant espresso powder for a warm coffee kick. They’re quick to make, perfect for gifting, and pair beautifully with any coffee drink.


Ingredients

2 1/4 cups all-purpose flour

1 tablespoon instant espresso powder

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

2 teaspoons vanilla extract


Instructions

1. In a medium bowl, whisk together the flour, espresso powder, baking powder, baking soda, and salt.

2. In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.

3. Add the egg and vanilla extract, mixing until fully combined.

4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.

5. Scoop tablespoon-sized dough portions, roll into balls, and coat each ball in granulated sugar.

6. Place on a parchment-lined baking sheet and bake at 350°F (175°C) for 8–10 minutes until the edges are set and centers are soft.

Notes

Use high-quality espresso powder for the best flavor.

Do not overbake—cookies should look slightly underdone in the center.
