Description
A cozy, nourishing soup filled with shredded chicken, pearl couscous, fresh vegetables, and bright lemon flavor. It’s the perfect comfort meal for chilly nights or when you need a bowl of something soul-soothing.
Ingredients
1 tablespoon olive oil
1 small yellow onion, diced
2 carrots, peeled and sliced
2 celery stalks, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
0.5 teaspoon ground turmeric
Salt and pepper, to taste
6 cups low-sodium chicken broth
2 cups cooked shredded chicken
1 cup pearl couscous
Juice of 1 lemon
2 tablespoons chopped fresh parsley
Crushed red pepper flakes, optional
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.
2. Stir in garlic, thyme, turmeric, salt, and pepper. Cook until fragrant, about 1 minute.
3. Pour in chicken broth and bring to a boil. Add pearl couscous, reduce heat, and simmer for 10 minutes.
4. Add shredded chicken and cook another 3–4 minutes until heated through.
5. Remove from heat. Stir in lemon juice and parsley. Add red pepper flakes if desired.
Notes
Make sure to toast the couscous briefly if you want a nuttier flavor.
If storing, add a splash of broth when reheating to loosen the soup.
