This 2-ingredient Cottage Cheese Flatbread is fluffy, protein-packed, and naturally gluten-free. Perfect as a wrap, a low-carb pizza base, or a snack on its own, it’s as versatile as it is simple.
Ingredients
1 cup cottage cheese
2 large eggs
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Add the cottage cheese and eggs to a food processor or blender. Blend until completely smooth.
3. Pour the blended mixture onto the lined baking sheet and spread it evenly into a thin oval or rectangle.
4. Bake for 25–30 minutes, or until the top is golden and firm to the touch. Let it cool slightly before removing from the parchment.
5. Slice into strips or squares and serve as desired.
Notes
Blend large-curd cottage cheese for a smoother texture.
Add herbs or spices to enhance the flavor (try garlic powder or Italian seasoning).
