Ingredients
12 oz pasta (fettuccine, tagliatelle, or spaghetti)
2 tablespoons olive oil
2 tablespoons unsalted butter
1 small onion, finely chopped
3 garlic cloves, minced
16 oz cremini or baby bella mushrooms, sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme or 1 teaspoon fresh thyme
1/4 cup dry white wine or broth
3/4 cup heavy cream
1 cup freshly grated Parmesan cheese
1/4 cup reserved pasta water
1/4 cup fresh parsley or chives, chopped (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/4 cup pasta water, then drain.
2. In a large skillet, heat olive oil and butter over medium heat. Sauté onion until soft, about 4 minutes. Add garlic and cook another minute.
3. Add sliced mushrooms, salt, pepper, and thyme. Sauté 8–10 minutes until browned and tender.
4. Pour in wine or broth, scraping up any browned bits. Simmer for 2–3 minutes until liquid reduces by half.
5. Lower heat and stir in cream. Once warm, add Parmesan and stir until smooth. Use reserved pasta water to loosen sauce if needed.
6. Add cooked pasta to the sauce and toss to coat. Taste and adjust seasoning. Garnish with fresh herbs and serve.
Notes
Use a mix of mushrooms (like shiitake or oyster) for even deeper flavor.
For a lighter version, use half-and-half instead of heavy cream.
If reheating, add a splash of cream or milk to maintain a smooth sauce.
