Ingredients
2 tablespoons butter
1 tablespoon olive oil
1 small onion diced
2 cloves garlic minced
2 medium potatoes peeled and diced
1 carrot diced
2 cups salmon skin removed and cut into chunks
3 cups chicken or vegetable broth
1 cup heavy cream
1 cup milk
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons all purpose flour
2 tablespoons fresh parsley chopped
Instructions
1. Heat butter and olive oil in a large pot over medium heat then cook onion until soft and add garlic
2. Stir in flour to form a roux then add potatoes carrots and slowly pour in broth
3. Simmer for 10 to 15 minutes until vegetables are tender
4. Add salmon and cook until opaque and flaky
5. Stir in milk cream and seasonings and heat gently without boiling
6. Finish with parsley and serve warm
Notes
Mash some potatoes for a thicker texture
Add extra vegetables like corn or celery for variation
Do not boil after adding cream to keep the chowder smooth
