Ingredients
1 pound linguine
2 boneless skinless chicken breasts
1 tablespoon Cajun seasoning
1 tablespoon olive oil
2 tablespoons butter
4 garlic cloves, minced
2 tablespoons all-purpose flour
1 cup milk
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Cook linguine until al dente. Drain and set aside, reserving some pasta water.
2. Season chicken with Cajun seasoning. In a skillet, heat olive oil over medium-high. Cook chicken until golden and cooked through. Rest and slice.
3. In the same skillet, melt butter and sauté minced garlic for 1 minute. Stir in flour and cook for another minute to form a roux.
