Ingredients
2 chicken breasts
8 oz penne pasta
2 tablespoons Cajun seasoning
3 garlic cloves, minced
1 cup heavy cream
1 cup shredded mozzarella cheese
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
Instructions
1. Coat chicken breasts with Cajun seasoning.
2. In a hot skillet, heat olive oil and 1 tablespoon butter. Sear chicken on both sides until golden and cooked through. Set aside.
3. Boil penne pasta in salted water according to package directions. Drain and set aside.
4. In the same skillet, add remaining butter and sautée minced garlic until fragrant.
5. Pour in heavy cream and simmer for a few minutes.
6. Gradually add mozzarella, stirring constantly until fully melted into a creamy sauce.
7. Slice the cooked chicken and return it to the skillet. Add cooked pasta and toss to coat evenly.
8. Season with additional salt and pepper to taste. Serve hot.
