Ingredients
2 boneless skinless chicken breasts
8 oz rotini pasta
2 tbsp Cajun seasoning
3 cloves garlic, minced
2 tbsp butter
1 cup heavy cream
1 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
2 tbsp chopped parsley (optional)
Instructions
1. Boil a large pot of salted water and cook rotini pasta until al dente. Drain and set aside.
2. Heat olive oil in a skillet over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper. Sear until golden and cooked through. Remove and set aside.
3. In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.
4. Pour in heavy cream and bring to a gentle simmer.
5. Gradually whisk in mozzarella and Parmesan cheese until smooth and fully melted.
6. Return cooked pasta and chicken to the pan. Toss everything to coat well in the sauce.
7. Let it simmer for 2–3 minutes. Taste and adjust seasoning if needed.
8. Garnish with fresh parsley and serve hot.
Notes
Pasta should be cooked al dente to avoid becoming mushy in the sauce.
Avoid overheating the cream or cheese to maintain a silky texture.
You can add sautéed mushrooms or spinach for extra depth and color.
