Ingredients
12 oz twisted pasta
2 chicken breasts, thinly sliced
1 tbsp Cajun seasoning
1 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tbsp butter
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped fresh parsley (optional)
Instructions
1. Season the thinly sliced chicken breasts with Cajun seasoning.
2. In a large skillet, heat olive oil over medium heat and cook the chicken until golden and fully cooked. Remove and set aside.
3. In the same skillet, melt butter and sauté the minced garlic until fragrant, about 1 minute.
4. Add heavy cream and bring to a gentle simmer.
5. Stir in mozzarella and Parmesan cheese, whisking until the sauce is smooth. Season with salt and pepper.
6. Cook twisted pasta in a separate pot according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
7. Add the cooked pasta and chicken to the sauce. Toss everything to combine. Use reserved pasta water if needed to adjust sauce thickness.
8. Garnish with chopped parsley and serve immediately.
