Ingredients
12 oz fettuccine pasta
2 large chicken breasts
2 cups broccoli florets
2 tbsp butter
3 cloves garlic, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
1/2 cup reserved pasta water
Instructions
1. Boil the fettuccine in salted water according to package instructions. Reserve 1/2 cup of pasta water before draining.
2. Season chicken breasts with salt and pepper. Heat olive oil in a skillet and cook the chicken for 6–7 minutes per side. Set aside and slice.
3. In the pasta pot, blanch broccoli for 2–3 minutes until tender-crisp. Drain and set aside.
4. In the same skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
5. Pour in heavy cream and bring to a gentle simmer. Whisk in Parmesan cheese until smooth and melted.
6. Add pasta, chicken, and broccoli to the sauce. Toss to coat, using reserved pasta water to adjust thickness if needed.
7. Serve immediately with additional Parmesan if desired.
Notes
This pasta is best served immediately for the creamiest texture.
Use freshly grated Parmesan for the smoothest sauce.
Add mushrooms or spinach for extra veggies and flavor depth.
