Creamy Chicken Pasta Salad

Description

A cool and creamy pasta salad packed with juicy chicken, crisp veggies, and a tangy-smooth dressing. Perfect for potlucks, meal prep, or a refreshing lunch.


Ingredients

3 cups cooked pasta (rotini or penne)

2 cups cooked chicken breast, chopped

1/2 cup celery, diced

1/2 cup red bell pepper, chopped

1/4 cup red onion, finely chopped

1/2 cup frozen peas, thawed

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste


Instructions

1. Boil your chosen pasta until al dente. Drain and rinse under cold water. Let it cool completely.

2. In a small bowl, whisk together the mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper.

3. In a large bowl, mix the pasta, chicken, celery, bell pepper, onion, and peas. Add the dressing and toss until well coated.

4. Chill for at least 1 hour before serving.

Notes

Use rotisserie chicken to save time.

Let the pasta cool before dressing to prevent sogginess.

Add extra lemon juice for a brighter flavor.
