Ingredients

2 lbs chicken breast (boneless, skinless)

1 lb spaghetti noodles

2 cups chicken broth

1 can (10.5 oz) cream of chicken soup

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 block (8 oz) cream cheese, softened

1 can (10 oz) diced tomatoes with green chilies (drained)

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

  1. Prepare the Chicken: Place the chicken breasts in the bottom of your crockpot. Season with garlic powder, onion powder, paprika, salt, and pepper.
  2. Add the Sauce Ingredients: Pour the chicken broth, cream of chicken soup, and cream of mushroom soup over the chicken. Add the diced tomatoes with green chilies and stir slightly.
  3. Slow Cook the Chicken: Cover and cook on low for 6 hours or high for 3-4 hours until the chicken is tender.
  4. Shred the Chicken: Remove the cooked chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  5. Add Creamy Ingredients: Stir in the softened cream cheese, sour cream, cheddar cheese, and Parmesan cheese until melted and creamy.
  6. Cook the Spaghetti: Cook the spaghetti noodles according to package instructions. Drain and add them to the crockpot. Stir until well-coated.
