Ingredients
1 lb rigatoni pasta
1 lb chicken breast, diced
3 tbsp butter
4 garlic cloves, minced
1 cup heavy cream
3/4 cup grated parmesan cheese
1/2 cup chicken broth
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 tbsp chopped parsley
Instructions
1. Bring a large pot of salted water to a boil and cook rigatoni until al dente. Reserve 1 cup of pasta water and drain.
2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, sear until golden and cooked through. Set aside.
3. In the same skillet, reduce heat and melt butter. Add garlic and sauté for 1 to 2 minutes until fragrant.
4. Pour in chicken broth and cream. Simmer for 3 to 4 minutes. Stir in parmesan and let it melt into the sauce.
5. Return chicken to skillet. Add cooked rigatoni and toss to coat. Add pasta water if needed. Garnish with parsley and serve warm.
Notes
This recipe is best served fresh but also reheats beautifully with a splash of milk or cream.
Don’t overcook the chicken; it continues to cook in the sauce.
