Ingredients
2 chicken breasts
8 oz penne pasta
4 garlic cloves, minced
2 tbsp butter
1 cup heavy cream
1 cup freshly grated parmesan cheese
1 cup shredded mozzarella cheese
1 tsp Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
Instructions
1. Season chicken breasts with salt, pepper, and Italian seasoning. Sear in melted butter until golden and cooked through. Set aside to rest.
2. Cook penne pasta in boiling water according to package directions. Reserve 1/2 cup of pasta water, then drain.
3. In the same skillet, melt more butter and sauté minced garlic until fragrant. Pour in heavy cream and simmer.
4. Stir in parmesan and mozzarella cheese. Whisk until sauce is smooth and creamy.
5. Slice rested chicken. Add pasta to the sauce and toss to coat. Adjust consistency with reserved pasta water if needed.
6. Add sliced chicken over the pasta, sprinkle with extra cheese, and let it melt.
7. Serve hot, garnished with parsley or cracked pepper if desired.
