Ingredients
2 chicken breasts
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
4 garlic cloves, minced
1 cup heavy cream
3/4 cup grated parmesan cheese
1 cup shredded mozzarella cheese
10 oz rotini or fusilli pasta
2 tablespoons butter
1/2 cup chicken broth
1 teaspoon Italian seasoning
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown and fully cooked. Remove from skillet and set aside.
2. In a pot of salted boiling water, cook the pasta until al dente. Drain and reserve 1 cup of pasta water.
3. In the same skillet, melt butter and sauté the garlic until fragrant. Add chicken broth, heavy cream, Italian seasoning, and parmesan. Stir and simmer until the sauce thickens.
4. Add the cooked pasta and reserved pasta water to the sauce. Stir in mozzarella and mix until melted and creamy.
5. Slice the cooked chicken and return it to the skillet. Stir gently to combine everything.
6. Garnish with fresh parsley and extra parmesan. Serve hot.
Notes
Use rotini or fusilli pasta for the best texture.
Don’t boil the cream—keep the heat medium-low.
Reheat leftovers with a splash of milk or cream to loosen the sauce.
