Description

This creamy mushroom garlic chicken Alfredo with hot honey roasted potatoes is the ultimate cozy dinner. Rich Alfredo sauce with seared chicken and sautéed mushrooms pairs beautifully with crispy, sweet-and-spicy potatoes. A comforting chicken Alfredo recipe with a gourmet twist, perfect for family meals or special evenings.


Ingredients

2 chicken breasts

1 cup cremini mushrooms, sliced

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons butter

8 oz fettuccine pasta

2 tablespoons olive oil

1.5 lbs baby potatoes, halved

2 tablespoons honey

1 teaspoon chili flakes

Salt and pepper to taste

2 tablespoons chopped fresh parsley


Instructions

1. Preheat oven to 425°F. Toss halved baby potatoes with olive oil, salt, pepper, and chili flakes. Roast for 30 minutes, flipping halfway.

2. Drizzle potatoes with honey and return to oven for 5 more minutes until crispy and golden.

3. Season chicken with salt and pepper. In a skillet, sear each breast in olive oil for 5-6 minutes per side. Remove and let rest.

4. In the same pan, melt butter. Add mushrooms and cook until browned, then add garlic and sauté for 1 minute.

5. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until smooth. Season with salt and pepper.

6. Boil fettuccine until al dente. Reserve 1/2 cup pasta water and drain.

7. Slice the chicken and return it to the pan. Add pasta and reserved water, mixing well to coat everything.

8. Serve creamy chicken Alfredo with hot honey roasted potatoes. Garnish with parsley and extra Parmesan if desired.

Notes

Don’t let the cream boil; a gentle simmer keeps the sauce smooth.

Use pasta water to adjust sauce consistency.
