Description
A cozy and creamy Italian-inspired soup with savory sausage, ditalini pasta, parmesan cheese, and a touch of cream—perfect for weeknight dinners or a comforting lunch.
Ingredients
1 tablespoon olive oil
1 pound Italian sausage, casing removed
1 small yellow onion, diced
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
4 cups chicken broth
1 can (14.5 oz) diced tomatoes, with juice
1 cup ditalini pasta
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 cup heavy cream
1/2 cup freshly grated parmesan cheese
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it apart as it cooks.
2. Stir in diced onion and cook until soft, about 5 minutes. Add garlic and red pepper flakes, cooking for another minute.
3. Pour in chicken broth and diced tomatoes with juice. Bring to a boil.
4. Add ditalini pasta, basil, and oregano. Reduce heat and simmer for 10–12 minutes until pasta is tender.
5. Lower the heat and stir in heavy cream and parmesan cheese. Let simmer 2–3 minutes until creamy.
6. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
Notes
Use spicy sausage for extra kick.
Add chopped spinach or kale during the last 5 minutes of cooking for more greens.
If reheating from frozen, add a splash of broth or cream to revive the consistency.
