Description
This Creamy Ranch Chicken Crock Pot recipe is a comforting and incredibly easy dinner idea made with just a few pantry staples. Tender shredded chicken is slow-cooked in a rich ranch-flavored cream cheese sauce and perfect over mashed potatoes, rice, or pasta.
Ingredients
2 pounds boneless skinless chicken breasts
1 packet ranch seasoning mix
1 (10.5 oz) can cream of chicken soup
1 (8 oz) block cream cheese softened
1/2 cup chicken broth
Black pepper to taste
Chopped fresh parsley optional, for garnish
Instructions
1. Place chicken breasts in the crock pot and sprinkle ranch seasoning evenly over the top.
2. In a bowl, mix together the cream of chicken soup, softened cream cheese, and chicken broth until mostly smooth.
3. Pour the mixture over the chicken in the crock pot.
4. Cover and cook on low for 6–7 hours or high for 4 hours, until the chicken is fork-tender.
5. Shred the chicken directly in the pot using two forks, then stir everything together until creamy and well mixed.
6. Season with black pepper and garnish with parsley if desired.
7. Serve hot over mashed potatoes, rice, noodles, or in sandwich buns.
Notes
Use chicken thighs instead of breasts for a juicier result.
Soften cream cheese before mixing for a smoother sauce.
Add frozen peas or corn in the last hour for a veggie boost.
