Ingredients
2 pounds Yukon Gold or Russet potatoes, peeled and cubed
1 head garlic
2 tablespoons olive oil
1/2 cup unsalted butter
3/4 cup whole milk (warm)
1/2 cup sour cream
Salt and black pepper to taste
1 pound ground breakfast sausage
1/4 cup all-purpose flour
2 1/2 cups whole milk
1/4 teaspoon ground sage (optional)

Instructions
1. Preheat oven to 400°F. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden.
2. Place peeled and cubed potatoes in a large pot. Cover with water, salt generously, and boil until fork-tender, about 15-20 minutes. Drain.
3. Return drained potatoes to pot. Add roasted garlic, butter, warm milk, and sour cream. Mash until smooth and creamy. Season with salt and pepper.
4. In a skillet, cook sausage over medium heat until browned. Do not drain fat.
5. Sprinkle flour over sausage. Stir and cook for 2 minutes. Slowly whisk in milk. Add sage if using. Simmer 5-7 minutes until thickened. Season to taste.
6. Serve mashed potatoes hot, topped generously with sausage gravy. Garnish with herbs if desired.

Use starchy potatoes like Russet or Yukon Gold for best results.
