Description

This creamy Rotel pasta and ground beef recipe blends zesty Rotel tomatoes, savory ground beef, and cheesy sauce for a comforting, quick dinner. A family favorite pasta dish perfect for weeknights.


Ingredients

1 lb ground beef

1 can (10 oz) Rotel tomatoes

12 oz pasta (penne or rotini)

4 oz cream cheese

1 cup shredded cheddar cheese

2 cloves garlic, minced

1 small onion, diced

1 tsp salt

1/2 tsp black pepper


Instructions

1. In a large skillet over medium heat, cook ground beef until browned. Drain excess grease.

2. Add diced onion and minced garlic to the beef. Sauté until fragrant and softened.

3. Stir in Rotel tomatoes with juices. Let simmer for 3–5 minutes.

4. Reduce heat and add cream cheese. Stir until melted and smooth.

5. Mix in shredded cheddar cheese and continue stirring until the sauce is creamy.

6. Meanwhile, cook pasta in salted water according to package directions until al dente. Drain.

7. Add cooked pasta to the skillet. Toss to coat evenly with the sauce.

8. Serve hot with optional toppings like extra cheese or green onions.
