Ingredients
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup whole milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1 teaspoon Dijon mustard
Pinch cayenne pepper
Instructions
1. Melt butter in a medium saucepan over medium heat.
2. Whisk in flour and cook for 1 minute to remove raw flour taste.
3. Gradually pour in milk while whisking to avoid lumps.
4. Cook for 3–5 minutes until slightly thickened.
5. Stir in garlic powder, onion powder, paprika, salt, and pepper. Add Dijon mustard and cayenne if using.
6. Reduce heat to low and add cheeses gradually, stirring until fully melted and smooth.
