Creamy Taco Mac and Cheese is a one-pot dinner that combines the cozy comfort of cheesy pasta with the bold, zesty flavor of taco seasoning. Perfect for busy weeknights or casual dinners, it’s a guaranteed hit with both kids and adults.
Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 tablespoons taco seasoning
2 cups beef broth
1 cup milk
8 oz elbow macaroni
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup sour cream
Salt and pepper to taste
Chopped cilantro or green onions for garnish (optional)
Instructions
1. In a large skillet or pot, cook the ground beef over medium-high heat until browned.
2. Add the diced onion and cook for about 3 minutes, until softened.
3. Stir in garlic and taco seasoning; cook for another 1 minute.
4. Pour in beef broth and milk. Stir in uncooked pasta and bring to a boil.
5. Reduce heat to a simmer, cover, and cook for 10–12 minutes until pasta is tender.
6. Remove from heat and stir in cheddar, Monterey Jack, and sour cream until smooth.
7. Taste and season with salt and pepper.
8. Garnish with cilantro or green onions if desired. Serve hot.
Notes
For extra flavor, toast the taco seasoning with the beef before adding liquid.
Use whole milk for a creamier texture, or swap for evaporated milk.
Stir in black beans or corn to bulk up the dish and add texture.
