Ingredients
2 large boneless, skinless chicken breasts, sliced
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper to taste
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups baby spinach
1 cup heavy cream
1 cup chicken broth
1/2 cup grated Parmesan cheese
8 oz pasta (fettuccine or penne)
1 tablespoon butter
Fresh basil or parsley, for garnish
Instructions
1. Season the chicken slices with salt, pepper, garlic powder, and Italian seasoning.
2. In a large skillet over medium-high heat, heat olive oil and sear the chicken until golden and cooked through. Remove and set aside.
3. In the same skillet, melt butter. Add garlic and sun-dried tomatoes. Sauté until fragrant, about 1–2 minutes.
4. Pour in chicken broth and heavy cream, scraping up any brown bits. Stir in Parmesan and simmer gently to thicken.
5. Stir in spinach until wilted. Return chicken to skillet and simmer for a few minutes.
6. Cook pasta according to package directions. Drain and toss with sauce and chicken.
7. Garnish with fresh herbs and serve hot.
Notes
Make sure to use heavy cream, not milk, to avoid curdling.
Add the pasta straight to the sauce for maximum flavor coating.
Reheat gently with a splash of cream to revive the texture.
