Ingredients
2 tablespoons olive oil
1 pound chicken breast, thinly sliced
1 teaspoon garlic powder
Salt and pepper, to taste
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
3 cups refrigerated cheese tortellini
2 cups fresh spinach leaves
Crushed red pepper flakes (optional)
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season chicken with garlic powder, salt, and pepper. Cook until golden brown and cooked through. Set aside.
2. In the same skillet, reduce heat to medium. Add minced garlic and sun-dried tomatoes. Sauté for 1–2 minutes.
3. Stir in heavy cream, Parmesan cheese, and Italian seasoning. Bring to a gentle simmer.
4. Add tortellini and cover. Cook for 5–7 minutes, stirring occasionally, until tender.
5. Add spinach and cooked chicken. Let heat through for 2 minutes. Optionally, sprinkle red pepper flakes. Serve hot.
Notes
Use refrigerated tortellini for best texture and speed.
Add mushrooms or bell peppers with the garlic for extra veggies.
For a lighter version, swap cream with half-and-half and reduce Parmesan.
