Ingredients

12 oz penne pasta

1 lb Italian sausage (mild or spicy)

1 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

1/2 cup sun-dried tomatoes, chopped

2 cups fresh spinach

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and black pepper to taste


Instructions

  1. Cook the Pasta – Bring a large pot of salted water to a boil and cook the penne according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Brown the Sausage – Heat olive oil in a large skillet over medium heat. Add sausage, breaking it into crumbles, and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.
  3. Prepare the Sauce – In the same skillet, add minced garlic and cook for 30 seconds. Pour in the chicken broth and heavy cream, stirring to combine. Let it simmer for 2-3 minutes, then add Parmesan cheese, Italian seasoning, and red pepper flakes. Stir until smooth.
  4. Add Vegetables – Stir in the sun-dried tomatoes and spinach. Cook until the spinach wilts, about 2 minutes.
  5. Combine Everything – Return the cooked sausage to the skillet and mix well. Add the drained pasta and toss to coat. If needed, gradually stir in reserved pasta water to loosen the sauce. Season with salt and black pepper to taste.
  6. Serve – Garnish with extra Parmesan cheese and black pepper. Enjoy warm!
