Ingredients
1 lb ground beef
12 oz penne pasta
8 oz Velveeta cheese, cubed
1/2 cup sour cream
1 cup beef broth
1 medium onion, diced
2 cloves garlic, minced
1 cup mushrooms, sliced
2 tbsp butter
1 tsp salt
1/2 tsp black pepper
Instructions
1. In a large skillet, melt butter over medium heat. Add diced onions and cook until translucent.
2. Stir in garlic and mushrooms. Cook until softened and fragrant.
3. Add ground beef, breaking it up with a spoon. Cook until browned and no longer pink. Season with salt and pepper.
4. Pour in beef broth and bring to a simmer.
5. Add cubed Velveeta and stir until fully melted into a creamy sauce.
6. Lower heat and stir in sour cream until combined.
7. In a separate pot, cook penne pasta in salted boiling water until al dente. Drain.
8. Add cooked pasta to the skillet. Toss until well coated and heated through.
