Description
Creamy Velveeta Chicken Rigatoni with Mozzarella Garlic Sauce is a rich and comforting pasta dish featuring tender rigatoni, juicy chicken breast, and a velvety cheese sauce. This family-friendly dinner recipe blends Velveeta and mozzarella with garlic and Italian seasoning for an easy, satisfying meal.
Ingredients
400g rigatoni pasta
2 cups cooked chicken breast, diced
1 1/2 cups Velveeta cheese, cubed
1 cup mozzarella cheese, shredded
3 garlic cloves, minced
1 cup heavy cream
2 tablespoons butter
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Boil the rigatoni in salted water until al dente. Drain and reserve some pasta water.
2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
3. Lower the heat and pour in the heavy cream. Stir to combine with the garlic butter.
4. Add the Velveeta and mozzarella cheeses. Stir constantly over low heat until the cheese is fully melted and the sauce is smooth.
5. Season the sauce with Italian seasoning, salt, and pepper. Adjust to taste.
6. Add the cooked chicken and stir to coat.
7. Fold in the cooked rigatoni. Mix gently to ensure all pasta is evenly coated. Add a splash of pasta water if the sauce is too thick.
8. Serve hot, optionally garnished with extra cheese and chopped parsley.
Notes
Make sure the cheese melts on low heat to avoid grainy texture.
Reserve pasta water—it helps adjust the sauce consistency perfectly.
For an extra golden top, place the pasta under a broiler with extra mozzarella.
