Ingredients
1 head cauliflower florets
1 cup all-purpose flour
1 cup milk (dairy or plant-based)
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 cups panko breadcrumbs
Olive oil spray
1/4 cup mayonnaise
1/4 cup Greek yogurt
1 clove fresh garlic minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey (optional)
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
2. Wash and dry the cauliflower, cutting it into bite-sized florets.
3. In a large bowl, whisk together flour, milk, garlic powder, paprika, salt, and pepper until smooth.
4. Dip each floret into the batter, shake off excess, then coat in panko breadcrumbs.
5. Place on the baking sheet and spray generously with olive oil.
6. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.
7. In a bowl, mix mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic, and optional honey to make the sauce.
8. Serve the hot cauliflower bites with garlic sauce on the side or drizzled on top.
Notes
Dry cauliflower thoroughly to avoid soggy coating.
Don’t skip the olive oil spray—it’s key for crispiness.
For added kick, mix some chili flakes into the sauce.
