Ingredients
1 lb chicken breasts or thighs
1 cup buttermilk
1 cup flour
1/2 cup cornstarch
2 tbsp Cajun seasoning
1 tsp salt
1/2 tsp black pepper
2 cups oil for frying
12 oz fettuccine pasta
1 1/2 cups heavy cream
3/4 cup grated Parmesan cheese
2 tbsp butter
2 cloves garlic, minced
1/2 tsp smoked paprika
1 cup roasted corn (fresh or frozen)
1 tbsp olive oil
Instructions
1. Marinate the chicken pieces in buttermilk with a pinch of Cajun seasoning. Cover and refrigerate for at least 30 minutes.
2. Mix flour, cornstarch, Cajun seasoning, salt, and pepper in a shallow bowl. Coat the marinated chicken evenly.
3. Heat oil to 350°F. Fry chicken in batches until golden and crispy. Drain on paper towels.
4. In a skillet, heat olive oil and roast corn until charred. Set aside.
5. Cook fettuccine according to package instructions. Reserve some pasta water and drain.
6. Melt butter in a pan, sauté garlic, add cream, smoked paprika, Cajun seasoning, and Parmesan. Simmer until creamy.
7. Toss cooked pasta in sauce, adding pasta water if needed to thin it.
8. Plate the pasta, top with roasted corn and crispy chicken. Serve hot.
