Ingredients
6 low-carb tortillas (almond flour or coconut flour-based)
6 oz cream cheese, softened
0.5 cup fresh or frozen blueberries
2 tablespoons powdered erythritol
1 teaspoon vanilla extract
0.5 teaspoon lemon zest (optional)
2 tablespoons butter
Cinnamon and powdered sweetener for dusting (optional)
Instructions
1. In a medium bowl, mix cream cheese, erythritol, vanilla, and lemon zest until smooth. Fold in blueberries.
2. Spread 2 tablespoons of the filling onto each tortilla and roll tightly.
3. Melt butter in a skillet over medium heat. Cook roll-ups seam-side down for 2–3 minutes per side until golden.
4. Dust with powdered sweetener and cinnamon if desired. Serve warm.
