Ingredients

1 1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces

2 large eggs, beaten

2 cloves garlic, minced

1 cup heavy cream

1/2 cup finely grated Parmesan cheese (for sauce)

1 tsp smoked paprika

1 tsp Cajun seasoning

1 tbsp chopped fresh parsley, optional for garnish


Instructions

1. Pat chicken dry and season with salt and pepper.

2. Set up breading station: one bowl flour, one bowl beaten eggs, one bowl panko mixed with 3/4 cup Parmesan.

3. Dredge chicken in flour, shake off excess, dip in egg, then coat in the Parmesan-panko mixture, pressing to adhere.

4. Heat olive oil and 2 tbsp butter in a large skillet over medium heat until shimmering.

5. Fry chicken in batches without crowding, 3 to 4 minutes per side, until deep golden and cooked through; transfer to a paper towel–lined plate.

6. In a small saucepan, melt 1 tbsp butter over medium heat. Add garlic and cook 30 seconds until fragrant.

7. Stir in heavy cream, smoked paprika, Cajun seasoning, and 1/2 cup Parmesan; simmer 2 to 3 minutes, stirring, until slightly thickened. Season to taste.

8. Serve chicken bites with the smoked Cajun Alfredo for dipping or drizzling; garnish with parsley if desired.

9. Optionally, toss with cooked pasta for a fuller meal.
