Ingredients
2 pounds baby red potatoes
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon sea salt
0.5 teaspoon black pepper
0.5 teaspoon smoked paprika (optional)
2 tablespoons chopped fresh parsley
Grated Parmesan or crumbled feta (optional topping)
Instructions
1. Place red potatoes in a pot, cover with cold water, and bring to a boil. Cook until fork-tender, 15-20 minutes. Drain and let cool slightly.
2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment.
3. Place potatoes on the sheet and gently smash to about ½ inch thick.
4. Drizzle with olive oil, sprinkle with garlic, salt, pepper, and paprika. Ensure each potato is well coated.
5. Roast for 25–30 minutes, flipping halfway, until crispy and golden.
6. Garnish with parsley and cheese if desired. Serve hot.
Notes
For extra crispiness, avoid overcrowding the pan.
