Description

Crockpot cheesy potatoes are the ultimate comforting side dish, perfect for holidays, potlucks, or weeknights. This creamy, cheesy, and easy slow cooker recipe is a crowd-pleaser everyone will love.


Ingredients

1 bag (32 oz) frozen hash browns or 6 cups fresh diced potatoes

2 cups shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1/4 cup melted butter

1/2 cup chopped onions (optional)

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Lightly grease the inside of your crockpot with butter or non-stick spray.

2. In a large bowl, combine cream of chicken soup, sour cream, melted butter, salt, pepper, and onions if using.

3. Fold in the frozen hash browns or fresh diced potatoes until evenly coated.

4. Transfer mixture to the prepared crockpot, cover, and cook on low for 4–5 hours until potatoes are tender.

5. About 30 minutes before serving, sprinkle shredded cheddar cheese on top, cover, and let cheese melt.

6. Serve warm directly from crockpot.

Notes

Use frozen hash browns to save time.

Don’t overcook to prevent mushy potatoes.

You can add crumbled bacon or green onions for garnish.
