This Crockpot Chicken Parmesan Soup brings all the flavors of your favorite Italian classic into a warm, hearty bowl. With tender chicken, rich tomato broth, melty cheeses, and pasta, it’s a slow-cooked comfort dish perfect for chilly days or effortless family dinners.
Ingredients
1.5 lbs boneless skinless chicken breasts
1 small onion diced
3 cloves garlic minced
28 oz crushed tomatoes
15 oz tomato sauce
4 cups chicken broth
1 tsp dried basil
1 tsp dried oregano
0.5 tsp salt
0.25 tsp black pepper
0.5 tsp red pepper flakes (optional)
2 cups uncooked rotini pasta
0.5 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Fresh basil or parsley for garnish
Instructions
1. Add chicken breasts, onion, garlic, crushed tomatoes, tomato sauce, chicken broth, and all the seasonings into the crockpot. Stir well.
2. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through.
3. Remove chicken, shred with two forks, and return to the crockpot. Stir.
4. Add uncooked pasta and Parmesan. Cover and cook on high for 20–30 minutes, until pasta is tender.
5. Stir in shredded mozzarella and ladle into bowls. Garnish with fresh herbs and serve.
Notes
Add the pasta only during the last 30 minutes to avoid overcooking.
Use chicken thighs for a richer flavor and juicier texture.
For a creamier texture, stir in a splash of heavy cream or ricotta at the end.
