Ingredients
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
0.25 teaspoon ground nutmeg
0.5 teaspoon ground allspice
1.5 cups granulated sugar
0.5 cup packed brown sugar
1.25 cups vegetable oil
3 large eggs
1 tablespoon vanilla extract
3 cups peeled and diced apples
1 cup chopped pecans or walnuts (optional)
Caramel glaze (store-bought or homemade)
Instructions
1. Preheat your oven to 350°F (175°C). Grease and flour a 10-cup bundt pan or use baking spray with flour.
2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
3. In a separate bowl, beat together the granulated sugar, brown sugar, and oil until smooth. Add eggs one at a time, beating well after each. Stir in vanilla.
4. Gradually mix dry ingredients into wet ingredients until just combined. Fold in diced apples and nuts (if using).
5. Pour batter into prepared pan, smooth the top, and bake for 55 to 65 minutes until a toothpick inserted in the center comes out clean.
6. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack. Once cool, drizzle with caramel glaze.
Notes
Use a mix of tart and sweet apples for the best flavor and texture.
