These Blueberry Butter Swim Biscuits are ultra-soft on the inside with golden, crispy edges thanks to a buttery bath. Juicy bursts of blueberry throughout make them perfect for breakfast, brunch, or a comforting treat.
Ingredients
1/2 cup unsalted butter
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
1 3/4 cups buttermilk
1 cup fresh or frozen blueberries
Instructions
1. Preheat oven to 450°F. Place the butter in an 8×8-inch baking dish and melt it in the oven. Remove once melted.
2. In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
3. Add buttermilk and stir gently to combine. Do not overmix.
4. Fold in the blueberries carefully.
5. Pour the batter into the baking dish over the melted butter. Spread evenly.
6. Use a butter knife to score the dough into 9 even squares.
7. Bake for 20–25 minutes or until golden and a toothpick comes out clean.
8. Cool slightly, then slice and serve warm.
Notes
Use fresh blueberries for best texture, but frozen works if tossed in flour first.
Scoring the dough before baking helps even rise and clean slices.
Serve with lemon curd, honey, or extra butter for a flavor boost.
