Description

These golden, savory empanadas are stuffed with a flavorful beef filling and baked to flaky perfection. Perfect as a snack, appetizer, or main course, they’re an easy way to bring bold Latin flavors to your table.


Ingredients

1 tablespoon olive oil

0.5 pound ground beef

0.5 small onion finely chopped

1 garlic clove minced

0.5 teaspoon ground cumin

0.5 teaspoon smoked paprika

Salt and pepper to taste

0.25 cup tomato sauce

1 tablespoon chopped green olives (optional)

1 tablespoon chopped fresh cilantro

1 package empanada dough discs or homemade dough

1 egg beaten (for egg wash)


Instructions

1. Heat olive oil in a skillet over medium heat. Add the onions and cook until soft.

2. Stir in garlic and cook until fragrant.

3. Add ground beef, cumin, paprika, salt, and pepper. Cook until browned.

4. Stir in tomato sauce and olives, then simmer for 5 minutes. Finish with chopped cilantro. Let cool.

5. Place a spoonful of filling in the center of each dough disc. Fold over to create a half-moon shape. Press edges with a fork to seal.

6. Chill empanadas for 15 minutes to firm up before baking.

7. Preheat oven to 400°F (200°C). Brush empanadas with beaten egg.

8. Place on a parchment-lined baking sheet and bake for 20-25 minutes until golden brown.

9. Let cool slightly before serving.

Notes

Chill the dough before sealing to prevent leakage.

Use water to seal the edges if dough is dry.

Leftovers reheat best in a toaster oven for a crispy finish.
