This Low Carb BBQ Chicken Bowl is a quick, flavorful, and guilt-free dish loaded with smoky grilled chicken, crunchy cabbage slaw, creamy avocado, and a tangy sugar-free BBQ drizzle. Perfect for meal prep or weeknight dinners!
Ingredients
2 boneless skinless chicken breasts
1/2 cup sugar-free BBQ sauce (plus more for drizzling)
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and pepper to taste
2 cups shredded green cabbage
1 cup shredded red cabbage
1/2 cup shredded carrots (optional)
1 ripe avocado sliced
2 tablespoons chopped fresh cilantro
1 tablespoon lime juice
1 tablespoon apple cider vinegar
1/4 cup mayonnaise
Optional: sliced jalapeño or pickled red onions
Instructions
1. Mix BBQ sauce, olive oil, paprika, garlic powder, salt, and pepper. Add chicken and coat evenly. Marinate for 15 minutes (or overnight).
2. Grill or pan-cook chicken over medium heat until cooked through (6–7 minutes per side). Rest and slice.
3. In a large bowl, combine green cabbage, red cabbage, and carrots.
4. In a separate bowl, whisk mayo, lime juice, and apple cider vinegar. Pour over slaw and toss to coat.
5. Divide slaw into bowls. Top with sliced chicken, avocado, cilantro, and any optional toppings.
6. Drizzle with more BBQ sauce if desired.
Notes
Use sugar-free BBQ sauce to keep this truly low carb.
Marinating longer will deepen flavor but isn’t required.
For a spicy kick, top with sliced jalapeños or pickled onions.
