Description
This Dill Pickle Pasta Salad is a creamy, tangy, and refreshing twist on traditional pasta salad. Packed with crunchy dill pickles, red onion, and cheddar cheese, it’s coated in a luscious pickle juice-infused dressing. Perfect for summer gatherings or meal prep lunches!
Ingredients
12 oz elbow macaroni
1 cup dill pickles, chopped finely
2/3 cup cheddar cheese, cubed small
1/2 cup red onion, minced
1/2 cup dill pickle juice, divided
2/3 cup mayonnaise
1/3 cup sour cream
1 tablespoon fresh dill, chopped
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
1. Boil the pasta according to the package instructions. Drain and rinse under cold water. Let cool completely.
2. Toss the cooled pasta with 1/4 cup of the dill pickle juice and let sit for 5–10 minutes.
3. In a bowl, mix together mayonnaise, sour cream, remaining pickle juice, garlic powder, chopped dill, salt, and pepper until smooth.
4. In a large bowl, combine pasta, chopped pickles, red onion, and cheese. Pour in the dressing and toss to coat evenly.
5. Cover and refrigerate for at least 1 hour or overnight before serving.
Notes
Use cold water to rinse pasta after cooking to prevent sticking.
Letting the salad chill longer enhances the flavor.
You can substitute Greek yogurt for sour cream to lighten it up.
