Ingredients
18 oz cheese ravioli
2 tablespoons olive oil
4 cloves garlic, minced
0.5 teaspoon red pepper flakes
0.5 cup sun-dried tomatoes (oil-packed), chopped
2 cups fresh baby spinach
1 cup heavy cream
0.5 cup chicken or vegetable broth
0.75 cup grated parmesan cheese
Salt and black pepper, to taste
Fresh basil or parsley, for garnish
Instructions
1. Bring a large pot of salted water to a boil. Cook ravioli according to package directions, then drain and reserve 1/4 cup pasta water.
2. In a large skillet, heat olive oil over medium. Add garlic and red pepper flakes; cook for 1 minute until fragrant.
3. Stir in chopped sun-dried tomatoes and cook for another 1-2 minutes.
4. Pour in heavy cream and broth. Simmer for 3-4 minutes until slightly thickened.
5. Stir in parmesan cheese until melted and smooth.
6. Add spinach and cook until just wilted, about 1-2 minutes.
7. Gently fold in the cooked ravioli. Add reserved pasta water if sauce is too thick.
8. Season with salt and pepper. Garnish with fresh basil or parsley. Serve warm.
Notes
Use thawed ravioli if using frozen to avoid watering down the sauce.
For extra protein, add grilled chicken or shrimp.
Leftovers can be reheated gently with a splash of cream or broth.
