Ingredients
1 (15 oz) can chickpeas, drained and rinsed
1/3 cup tahini
2 tablespoons freshly squeezed lemon juice
1 small garlic clove, minced
2 to 3 tablespoons cold water
2 tablespoons extra virgin olive oil
1/2 teaspoon ground cumin
Salt to taste
Optional: paprika, chopped parsley, or olive oil for garnish
Instructions
1. Add chickpeas, tahini, lemon juice, and garlic to a blender or food processor. Blend until thick and smooth.
2. With the blender running, drizzle in cold water and olive oil. Add cumin and salt, blend until fluffy. Scrape down sides as needed.
3. Taste and adjust seasoning or liquid as desired.
4. Transfer to a serving bowl and garnish with olive oil, paprika, or parsley. Serve with pita, veggies, or crackers.
Notes
For extra-smooth hummus, peel the chickpeas or simmer with baking soda before blending.
Cold water helps make the hummus fluffier—add slowly for better control.
