Description
These Easy Apple Cinnamon Muffins are warm, fluffy, and filled with bits of fresh apple in every bite. A sweet cinnamon sugar topping adds a perfect crunch, making them the ideal quick-bake treat for fall mornings, lunchboxes, or cozy weekends.
Ingredients
1 3/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup milk
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 large egg
1 1/4 cups diced apples
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
Instructions
1. Preheat oven to 375°F (190°C) and prepare a 12-cup muffin tin with liners or non-stick spray.
2. In a small bowl, mix the topping ingredients (sugar and cinnamon) and set aside.
3. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, salt, cinnamon, and nutmeg.
4. In a separate bowl, whisk together the milk, oil, vanilla, and egg until smooth.
5. Combine the wet and dry mixtures, stirring just until moistened. Fold in the diced apples.
6. Divide the batter into muffin cups, filling each about 3/4 full. Sprinkle with the cinnamon sugar topping.
7. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
8. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
These muffins taste best warm with butter or honey.
Make sure apples are diced small for even baking.
Don’t overmix the batter—lumpy is good!
