Description

Creamy, buttery mashed potatoes get a major upgrade with sweet, golden caramelized onions. Perfect for holiday meals or comfort food dinners, this savory side dish is loaded with flavor and warmth.


Ingredients

2 pounds Yukon Gold or Russet potatoes, peeled and cubed

2 tablespoons unsalted butter (for the onions)

1 tablespoon olive oil

2 large yellow onions, thinly sliced

1/4 teaspoon salt (for onions)

1/2 cup whole milk or heavy cream

4 tablespoons unsalted butter (for the mash)

Salt and pepper to taste

Optional: chopped chives or parsley for garnish


Instructions

1. In a large skillet over medium heat, melt 2 tablespoons of butter with the olive oil. Add sliced onions and 1/4 teaspoon of salt. Cook slowly, stirring occasionally, for 30-40 minutes until the onions are deeply golden and caramelized. Set aside.

2. Place the peeled and cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes or until fork tender. Drain well.

3. Return the drained potatoes to the pot or a mixing bowl. Add 4 tablespoons of butter and the warmed milk or cream. Mash until smooth and fluffy.

4. Stir in the caramelized onions until evenly combined. Season with salt and black pepper to taste.

5. Transfer to a serving bowl, garnish with herbs if using, and serve warm.

Notes

For richer flavor, use heavy cream instead of milk.

Make the onions up to 3 days ahead to save time.

Warm the milk or cream before adding to prevent gummy texture.
