Description

These Easy Cheesy Ground Beef Quesadillas are the perfect quick dinner or satisfying snack. Crispy golden tortillas packed with seasoned beef and melty cheese—ready in minutes with simple ingredients.


Ingredients

1 lb ground beef

1/2 cup diced onion

1 tsp garlic powder

1 tsp chili powder

1/2 tsp cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 tbsp olive oil

Optional: diced jalapeños, chopped cilantro, salsa, sour cream for serving


Instructions

1. In a skillet over medium heat, add the ground beef and diced onion. Cook until browned and onions are soft, about 6–7 minutes. Drain any excess grease.

2. Add garlic powder, chili powder, cumin, salt, and pepper. Stir and cook for 1–2 minutes until fragrant.

3. Lay out the tortillas. On half of each, layer cheese, spoon beef mixture, then top with more cheese. Fold over to close.

4. Heat olive oil in a skillet. Cook each quesadilla 2–3 minutes per side, pressing with a spatula, until golden and cheese is melted.

5. Transfer to a board, slice into wedges, and serve warm with dips or toppings of choice.

Notes

Let quesadillas rest a minute before slicing for less mess.

For extra flavor, add sautéed peppers or jalapeños.

Reheat in a skillet to keep them crisp—avoid microwaving.
